You can choose the language your Adobe CC program will be installed in from the Adobe CC download manager.
Adobe Moses Tools seems to be responsible for localization:
Apparently in Adobe CC on Windows 7 the only way to set the UI language is to set up the desired language in the Adobe CC Download Manager. Once special case of this seems to be when you want to change the language to English in which case a hack seems to be
Go to C:Program FilesAdobeAdobe XYZ (e.g. Photoshop) CC (64-bit)AMT
and rename the file .Localesen_USSupport Filestw10428.dat to something else.
Since the Photoshop install installs both a 32-bit version (under Program Files) and a 64-bit version (under Program Files (x86)), you can say delete the tw10428.dat from the 32-bit folder and keep it in the 64-bit folder in order to take advantage of having both an English and Italian version on the system without having to download PhotoShop CC twice. Untested:
In the case of Adobe CS6 (Master Collection Multilingual), do the following
Go to C:Program FilesAdobeAdobe XYZAMT
and copy the desired localization file to C:Program FilesAdobeAdobe XYZAMTAMTLanguages

Unfortunately this does not work for Dreamweaver which uses a different folder structure than Photoshop.
For Dreamweaver you will have to change the language settings in Creative Cloud.exe and download everything again, unfortunately. You can then have a C:Program Files (x86)AdobeAdobe Dreamweaver CC installation with the English download, and a C:Program Files (x86)AdobeITAdobe Dreamweaver CC installation containing the italian download (with the download language corresponding to what was set in Adobe Creative Cloud download application before starting the download).
